CURED MUZZLE AND HEAD OF PORK (SOPRASSATA)
It is a typical product of the centre of Italy. The meat is simply boiled, chopped up, flavoured
and put into sacks of 5 to 40 kilos. The product is then put aside to cool so as to make it harden.
it can be eaten simply sliced and is characterized by an intense scent and an unmistakable
moderately spiced taste.
