This product is made only of Italian lean pork meat, which is lightly flavoured with spice and salt and then seasoned for one month and a half, for flat bacon, up to three months for the rolled one. It is characterized by a delicate flavour and smell and is excellent both cooked or symply raw and sliced


 For this product the cheek of exclusively Italian pigs is cut off and treated as for bacon. Its peculiar taste makes it particularly suitable for the preparation of the typical Italian "amatriciana" sauce for pasta (hot tomato sauce with seasoned pig's cheek chopped into small cubes) or to give a special taste also to other dishes.
