Although it has always been considered as a second quality ham, our shoulder ham has indeed a very peculiar taste. For this product we only use the shoulder of Italian pigs of a certain weight (from 8 to 10 kilos) so as to have a well-balanced percentage of fat and lean meat. Our shoulder hams are made with the same careful methods used for our well-known hams and they are seasoned in naturally aired rooms for all the necessary time, thus abtaining a product characterized by a particular taste (different from that of ham) which reminds of the old traditional shoulder hams made by Tuscan farmers in the past.
